1 TBS paprika
2 tsp seasoned salt/kosher salt
2 tsp black pepper
cayenne or garlic pepper to taste (optional)
1/2 c flour (1 cup per 4 chops)
1 egg
2 tbs milk
4 bone-in pork chops, 1/2 or 1 inch thick, 6-8 oz each
3 Tbs olive oil/olive oil cooking spray

1. If chops are 1 inch thick, preheat oven to 400 degrees. Line a rimmed baking sheet with foil and place it in the oven to allow it to heat up.
2. In a small bowl, mix together flour, paprika, salt and pepper.
3. Beat egg & milk.
4. Wipe moisture from chop.
5. Dip pork chop into egg.
6. Dip chop into flour. Pat/rub into meat if needed, avoiding excess and lumps. Completely coat chop.
7. When oven has reached 400 degrees, sear the chops: add oil, heat a large, heavy-bottomed skillet over med-high heat, about 3 minutes. Add the pork chops. Sear 2 minutes per side, without moving the chops, until well-browned, even charred in spots. (May need to sear less time on second side). If only frying pork chops and not also baking the, increase frying time to 3-4 minutes per side of pork chop.
8. If chops are 1/2-inch thick, they should be ready (internal temperature should reach 145 degrees). Transfer to platter, loosely cover with foil and allow to rest 5 minutes before serving.
9. If chops are 1 inch thick, transfer them to hot baking sheet, place in oven and roast 10 minutes, to a internal temperature of 145 degrees. Transfer to a platter, tent with foil and allow to rest 5 minutes, then serve.
