4 qts. tomatoes – peeled and quartered
4-6 cloves garlic
1 large green pepper
1 large onion
2 Tbsp. olive oil
4 cans (18 oz.) tomato paste (2-4 depending on consistency you like)
¼ cup brown sugar
2 Tbsp. salt (canning salt if you are canning it)
2 Tbsp. basil
2 tsp. oregano
2 tsp. Italian seasoning
(add more to taste of the last 3 ingredients)

Chop tomatoes, peppers, onions, press garlic. Add remainder of ingredients. Cook 30 minutes. Pack in hot jars. Process in boiling water bath 20 minutes or pressure cook for 10 minutes at 10 pounds. If canning I add ¾ cup vinegar and just enough brown sugar to offset the vinegar (to taste). If you have extra zuchinni chop it up and add to sauce for “garden spaghetti”.
