2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1/2 cup unsalted butter (room temperature)
1 cup sugar
2 eggs (room temperature)
3 medium bananas (mashed)
1 cup chopped walnuts

Directions:
Directions:
Preheat the oven to 350º. Lightly butter and flour a 9x5x3 inch loaf pan. Using a mixer, cream the butter and sugar, add the eggs. Mix the flour, baking soda and salt in a separate bowl. Add the mashed bananas to the mixer (low). Using a spatula, thoroughly mix in the flour mixture to the point you don't see any flour streaks. Fold in the chopped nuts and pour into the loaf pan. Let sit for 20 minutes before baking.

Bake at 350º for approximately 55 minutes or until a toothpick inserted in the center comes out clean. Cool the bread in the loaf pan on a wire rack for about 15-20 minutes then turn it out of the pan and let cool completely on the rack. Wrap in foil.

Extra loaves can be stacked and frozen. Just let it thaw for an hour and it's ready to cut.

**Banana Note- if you can, let the bananas get as dark as possible. Overripe is best.

I started making this in a coffee can back in the 60's. It was simple, easy and made a great sweet Christmas gift for friends and family in addition to cookies. Keeping a few in the freezer meant they would be ready for after school snacks or something sweet with coffee or tea. And because this was so easy to make, it was a great break between the making of Christmas cookies that were more involved.
