1 large head of cauliflower

1 can cream of mushroom soup

2 cups grated cheddar cheese

salt and pepper to taste

Directions:
Directions:
Remove green leaves and part of stem so cauliflower will stay together and sit flat when upright.

Place cauliflower upside down into large pot and cover with cold water and add about 1 tbsp salt. Bring to boil. Simmer 30 to 40 mins. oil the cauliflower starts to fall apart.

Remove from heat and carefully remove from pot using slotted spoon.

Put upright in baking dish. Sprinkle salt and pepper and slather soup all over.

Bake 350º for 20 - 30 mins. until hot.

You can do this day before right up till the baking and bake the next day to save some time.
