1 c. butter
1 c. sugar
1 c. brown sugar
2 large eggs
1 tsp. pure vanilla extract
2 c. all purpose flour
2 c. oatmeal, blended fine in a blender or food processor*
1/2 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
2 c. chocolate chips
1 c. coconut (optional)
1 1/2 c. chopped nuts

Directions:

1. Using a mixer, cream butter and sugars.
2. Add eggs and vanilla. Mix.
3. In a separate bowl, mix together flour, oatmeal, salt, baking powder and baking soda.
4. Add to butter mixture and when blended add the chocolate chips, coconut, and nuts.
5. Roll into balls and place 2 inches apart on a cookie sheet.
6. Bake for 10 minutes at 375 degrees.
7. Makes about 4 dozen cookies.

I don't always blend my oatmeal. I like the chewiness of the rolled oats.

I don't bake all the cookies at once. I store the leftover dough in the freezer. First I roll into balls and set them on a cookie sheet. Then I place them in the freezer for about an hour. After that I remove the cookie dough balls and place them in a gallon size freezer baggie. The next time I want to eat a few of these delicious cookies, I just take out however many I want and bake them.
