1-2 lbs. fresh or frozen shrimp
1 sliced yellow onion
½ stalk celery cut into big chunks, including the leaves
2 tsp. minced garlic (I used minced garlic in jar)
2 bay leaves
1 heaping tsp salt
½ tsp black pepper
1 sliced lemon

The measurements in this recipe are not exact. You can add more celery and onion if you like.

Get big pot like you would make use to boil spaghetti. Fill with cold water about ⅔ full.

Add sliced onion & celery chunks to the water.

Add salt, pepper, garlic & bay leaves.

Bring water to boil and immediately turn down to simmer for 10 minutes.

Add slices of lemon.

Add shrimp. Cook for 5 to 10 minutes until shrimp are completely pink.

Pour cooked shrimp & vegetables into spaghetti strainer to drain liquid.

Chill the shrimp with the veggies until you are ready to peel them and serve with cocktail sauce.
