1 cup oatmeal (not instant)
1½ cups buttermilk
1½ cups packed brown sugar
½ cup vegetable oil
2 egg whites, well beaten
1 cup all purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
1¾ cups raisins
¾ cup chopped nuts

Preheat oven to 350º . Combine oatmeal and buttermilk in a large bowl. Let stand for a few minutes.
Add other ingredients to mixture. Mix well. Spray or grease muffin tin. Fill ⅔ full. Bake 15 minutes or until brown.
