1 onion, chopped
1 T. butter
8 oz. fresh crabmeat
1/4 lb. shrimp, peeled, deveined and coarsely chopped
8 oz. Colby cheese
4 (10-inch) flour tortillas
1 c. half and half
1/2 c. sour cream
1/4 c. butter, melted
1 1/2 tsp. dried parsley
1/2 tsp. garlic salt

Preheat oven to 350. In large skillet, saute onion in 1 T. butter until transparent. Remove skillet from heat and stir in crab and shrimp. Shred cheese and mix half of it into the seafood. Fill mixture into center of each tortilla. Roll tortillas up around the mixture and arrange tortillas in 9x13 baking dish.

In saucepan over medium-low heat, combine half and half, sour cream, 1/4 c. butter, parsley and garlic salt. Stir until mixture is lukewarm and blended. Pour sauce over enchiladas and sprinkle with remaining cheese. Bake for 30 minutes.
