French Baguette (cut into ½" slices)
3 Tablespoons Extra Virgin Olive Oil
4 Cloves Garlic (halved)
6 Plum Tomatoes (diced)
2 Cups Mozzarella Cheese (shredded)
1 Bunch Fresh Basil (cut into thin strips)
Salt and Pepper (to taste)

Directions:
Directions:
1. Preheat broiler.
2. Brush the baguette slices with oil. Place on baking sheet.
3. Toast under broiler 3 minutes. Watch carefully to avoid burning.
4. Remove from oven. Rub each slice with garlic half.
5. Place tomatoes in bowl. Drizzle with oil. Salt and pepper, to taste.
6. Place crostini on serving tray. Top each with a sprinkle of mozzarella.
7. Cover each with a spoonful of tomatoes. Garnish with basil.
