2 medium eggplants, cut into 1/4" slices
2 eggs, beaten
2 cps. seasoned bread crumbs
salt and pepper
parmesan cheese

Directions:
Directions:
Preheat oven to 350. Place beaten eggs in one bowl and bread crumbs, salt and pepper in another bowl. Slice eggplants and dip each slice into egg, then crumbs and place on baking sheet lined with foil and sprayed with cooking spray. Bake 15-20 min., turning once. Remove from oven when golden brown and sprinkle with parmesan cheese.
