1 cup cornmeal
1 cup flour
1/3 cup sugar, plus 2 TB
1 TB baking powder
1/2 tsp salt
1/3 cup vegetable oil
3 TB melted butter
2 TB honey (optional)
2 eggs, beaten
1 cup milk

Directions:
Directions:
1) Mix dry ingredients together with a wisk in a mixing bowl.
2) Add wet ingredients to the dry ingredients and stir together with a wooden spoon. Do NOT overmix!
3) Spread in a greased 8X8 pan, or muffin tin (12 ct). Bake at 375 degrees for 30 minutes (12-15 min for muffins), or until sides are golden brown and top is spongy to touch (bounces back).

This cornbread is moist and dense, and sweet. It goes with any dish! It's even good the next day. It's so easy to make too!
