3 cups flour
1 tsp. baking soda
1 tsp salt
1 tsp cinnamon
2 cups sugar
4 eggs
1 1/4 - 1 1/2 cups vegetable oil
1 tsp. vanilla extract
1 cup nuts
3 cups peeled, diced apples
1/2 cup pecans
1/2 cup brown sugar

Directions:
Directions:
Preheat oven to 375 degrees. In a large bowl, combine flour, baking soda, salt, cinnamon and sugar. In a separate bowl, beat eggs until fluffy. Add oil and vanilla, mix well. Gradually add wet ingredients to dry ingredients, mix well. Fold in nuts and apples. Divide batter between 2 lightly grease loaf pans. Sprinkle with pecans and brown sugar. Bake at 375 degrees for 45-60 minutes.
