Praline Bread Pudding Recipe

6 large eggs
3 cups heavy whipping cream
3 cups milk
2 cups packed dark brown sugar
2 Tbsp. vanilla
1/4 tsp. salt
1/4 tsp. nutmeg
1 16-oz. day-old French bread loaf, cut into 1-inch cubes
2 cups coarsely chopped toasted pecans

PRALINE SAUCE
3 Tbsp salted butter
1 Tbsp.all-purpose flour
1 cup heavy whipping cream
1/2 cup packed dark brown sugar
2 Tbsp vanilla
1/4 tsp nutmeg
1/8 tsp salt

PUDDING
1. Whisk together first 7 ingredients in a large bowl.
2. Add bread cubes, stirring to coat thoroughly.
3. Let stand 1 hour, stirring occasionally to ensure an even coating.
4. Stir in pecans.
5. Lightly grease a 13" x 9" baking dish; pour bread mixture into dish.
6. Bake 45 minutes; then cover with aluminum foil
7. Return to oven and continue baking until bubbly around edges and firm in center (about 10-15 minutes)
8. Remove from oven and let stand 5 minutes.

PRALINE SAUCE
1. Melt butter in a small saucepan over medium-low
2. Whisk in flour and cook, whisking constantly, until foamy and golden brown (3-4 minutes)
3. Whisk in cream and brown sugar
4. Cook, whisking constantly until thickened (about 3 min.)
5. Whisk in vanilla, nutmeg, and salt
6. Cook, whisking constantly, until bubbly (2-3 minutes)
7. Serve over bread pudding, with whipped cream if desired.
