3 eggs
2 cups sugar
1 cup vegetable oil
1 tsp. vanilla extract
2 cups flour
2 tsp. ground cinnamon
1 tsp. baking soda
1/2 tsp. salt
4 cups tart apples, peeled and chopped
3/4 cup pecans, chopped

Directions:
Directions:
In a large mixing bowl, beat eggs, sugar, oil and vanilla. Combine flour, cinnamon, baking soda and salt, add to egg mixture and mix well. Fold in apples and nuts. Pour into greased cake pan. Bake at 350 degrees for 55-60 minutes or until a toothpick comes out clean. Cool.
