1 quart Milk
1 c. Rice, long grain only
1 quart half and half
4 eggs, separated
1 c. Sugar
2 t. Vanilla extract
Cinnamon for topping

Directions:
Directions:
Boil milk and rice until liquid is absorbed. Blend 4 egg yolks, sugar and half and half in separate bowl. Add egg mixture and return to heat until mixture is loose but starts to stick to the back of a spoon. Add vanilla. Put in casserole. Beat egg whites until stiff. Top casserole and sprinkle with cinnamon. Put into a hot oven until light brown.

This is an old-fashioned recipe from my Vermont neightbor Chris Heudorfer, who was a great cook and also a mother of small children in the '70s ( as was I ) when we lived in Jericho Center.
