6 chicken breasts
6 slices of fontina cheese
6 slices of prosciutto
Tarragon for seasoning
1-2 eggs, whisked
Bread.crumbs and Parmesan cheese for coating
Butter for sautéing
Sauce:
3/4 c. White wine
1/2 c. Chicken broth
2 T. Corn starch
2 T. Water
( adjust quantities of sauce for number of chicken breasts)

Directions:
Directions:
Place slice of fontina cheese and prosciutto ham on each boned and skinned chicken breast. Sprinkle with tarragon, roll up, and skewer. Dip in egg, then in crumbs and grated Parmesan cheese. Sauté in butter until golden. For the sauce, mix wine and chicken broth ( can be from cube)and bring to a boil. Stir in corn starch and water and cook until thick. Pour over chicken breasts and bake at 350º for 30 minutes.
