4 cups blueberries, raspberries or hulled strawberries, divided
1 cup plus 1 T superfine or powdered sugar or more to taste, divided
1½ cups heavy cream

Directions:
Directions:
Toss 2½ cups chosen fruit with 1/2 cup sugar; set aside.
Combine remaining 1½ cups berries and 1/2 cup sugar in a blender; process until pureed.
Force the pruee through a sieve to remove the seeds.
Taste; the puree should be quite sweet; if it is not add a little more sugar.
Combine cream and remaining 1 T sugar; beat until it holds soft peaks.
Stir in puree; then fold in sugared berries.
Taste; add more sugar if necessary.
Serve immediately or refrigerate for up to 1 our.
