13½ pounds apples, washed, peeled, cored and sliced.
1/2 cup water
1/2 cup sugar, if desired

Directions:

Make mixture of vinegar water or use ascorbic acid in water to dip apples in to prevent browning. Drain.
Place slices in an 8 to 10 quart pot. Add water.
Place on medium heat and cook 5 to 20 minutes, stirring occasionally, until tender,
[Amount of cook time is dependent upon the apple maturity and variety.]
When tender, press through a strainer or food mill.
Add sugar, if sweetened applesauce is desired. Stir well.

Select apples that are sweet, juicy and crisp.
For a tart flavor, add 1 to 2 pounds tart apples to each 3 pounds of sweeter apples.
