2 med. sweet potatoes (6 to 8 oz. each)
1 med. apple
2 Tbsp. brown sugar
1/2 tsp. butter-flavored sprinkles
1 Tbsp apple or orange juice

Directions:
Directions:
In a medium-covered saucepan cook the sweet potatoes in enough boiling water to cover the potatoes for 25 to 35 minutes or until tender; drain and cool slightly. Peel the potatoes and cut into 1/2 inch thick rings. Cut the apple rings in half crosswise. Place apple slices in a 1-quart casserole. Place sweet potato slices atop of apple slices. Sprinkle with brown sugar and butter-flavor sprinkles. Drizzle with the apple or orange juice. Bake, covered, at 350 degrees for 25 to 30 minutes or until heated through. Stir gently and serve, spooning juices over potato and apple slices.
