Ingredients: 1 cut up chicken, or thighs/leg/breasts 2-3 carrots- diced, or cut in rings 2-3 stalks celery - dice, or cut in rings 1 onion - diced 2 cups brown rice Salt, pepper, paprika, garlic powder to taste 3 cups water

Directions:Preheat oven to 350º Spray 9x13 pan with cooking oil Place rice in the bottom of the pan Place the vegetables over the rice and stir around until rice and vegetables are evenly dispersed. Place chicken pieces on top of vegetables/rice Season generously with spices Add water to cover the rice Cover with foil and bake for 1 hour Uncover and bake another 30 minutes so the chicken skin gets crispy. --- Scoop out rice into serving bowl Place chicken in serving dish |

Notes: I got a house warming dish from my sister, Joyce, in 2003, right after I completed a huge renovation on my house. I use that dish weekly so I think of her a lot. The dish (both the recipe and the oven-table dish) is best when I'm tight on time or don't want to wash another dish!
I've also made this for holidays and doubled the recipe. You have to increase cooking time since the pan will be quite crowded.
Change up the seasonings depending on your preference. I've made this with Zatar for Middle Eastern flare, herbs and minced garlic for an Italian night.
