Ingredients:  
1 Rotisserie chicken, chilled, deboned, and skin removed.
1 Head romaine lettuce. Separated and coarsely chopped.
Red seedless grapes, washed and cut in half
Salad olives
1 Cucumber, peeled and sliced
Pickled beets
Cherry tomatoes cut in half
1 Avocado, cut into chunks
1/2 stick of Pepper Jack cheese cut into chunks
Feta cheese crumbles to taste
Tropical trail mix (optional)
Chopped pecans (optional)
Shredded carrots
Seasoned croutons

Directions:
Directions:
Chop the chicken into large chunks.
Prepare the salad by combining and lightly tossing ingredients one at a time.

I use Ken's Light Caesar Dressing©. But it tastes great with any dressing.
