Preheat oven to 350º. Grease and flour a Bundt pan and put it on the side.

1 cup butter, softened (2 sticks)
2 cups white sugar
2 cups fresh sweet potatoes (boil until soft) and mash. I put a little almond extract in the water to kick the flavor up a notch. You can use vanilla extract if you prefer.
1 teaspoon almond extract
4 eggs
3 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon ground nutmeg
1/4 teaspoon salt

Combine dry ingredients: flour, baking powder, baking soda, cinnamon, nutmeg and salt. Set aside.

In large mixing bowl, cream butter and sugar until light and fluffy. Slowly add mashed sweet potatoes and almond extract. Mix until well blended. Add eggs, one at a time until well mixed. Add flour mixture to potato mixture a little at a time. Beat on low until combined.

Pour batter into pan. Bake at 350º for about 1 hour, or until a wooden toothpick inserted into cake comes out clean.
