Ingredients:  
1 tsp canola oil
1 small onion chopped
1 glove garlic minced
1 tsp ground cumin
¼ tsp cayenne
2 cups potatoes chopped in small to med size cubes
900 ml chicken broth
1 cup water
1 bunch of kale
Juice of ½ lemon
½ red pepper diced

Directions:
Directions:
In a large saucepan- heat canola oil.
Sautee onion, add garlic, cumin and cayenne.
Add potatoes, broth and water simmer for 5 min.
Add kale.
Add lemon juice and simmer for 20 min.
Add red pepper as garnish.
