2-3 chicken breasts, cut into 1-inch pieces
2 T. butter
salt and pepper, to taste
1 can baby potatoes
1 bag frozen peas, carrots, and corn mixture
2 cans cream of chicken soup
1 c. shredded cheese
milk, to desired consistency
2 refrigerated pie crusts

Directions:
Melt butter in pan and cook chicken. Season with salt and pepper. Meanwhile, in large bowl, mix together vegetables, cheese, and soup. Add in cooked chicken and add milk (a little at a time) to reach desired consistency. Add additional salt and pepper, if desired. Press one pie crust into deep dish pie plate. Slowly pour mixture into pie pan. Any leftover filling can be frozen for use at another time. Place 1 remaining pie crust on top and cinch around edges with fingers, making sure pie is sealed. Trim any excess pie crust from edges. Cover with foil and bake at 350º for 1 ½ to 2 hours.
