1 pkg or 2-1/4 tsp active dry yeast
1/4 c. warm water (110-115 degrees F)
1 c. warm milk (110-115 degrees F)
1/4 c. melted butter
1/2 c. warm mashed potatoes
1 egg
1/4 c. sugar
1-1/4 tsp. salt
4 c. all-purpose flour

Directions:
In a mixing bowl, dissolve yeast in water. Add milk, shortening, potatoes, egg, sugar, salt & 2 cups flour; beat until smooth. Add enough remaining flour to form a soft dough. If using stand mixer with dough hook, continue adding flour until dough pulls away from bowl & is smooth & elastic. Place in a greased bowl, turning once to grease top. Cover & let rise in a warm place until doubled, about 1 hour. Punch dough down & divide in half.
Method 1:
Divide each half into 36 pieces; shape into balls. Place 3 balls each into greased muffin cups. Cover & let rise in a warm place until doubled, about 30 minutes. Bake at 400F for 12-15 minutes or until golden. Remove to wire racks. Serve warm.
Method 2:
Divide each half into 10-12 pieces; shape into balls. Place on greased cookie sheet, leaving room to expand. Can be used as hamburger buns.
