1 lb. ground beef
½ lb. ground pork
½ lb. ground veal
¼ c. finely chopped onion
2 T. finely chopped celery
2 tsp. salt
¼ tsp. pepper
¼ tsp. dried sage
¼ tsp. dry mustard
¼ tsp. poultry seasoning
4 slices soft bread, cubed
1 c. warm milk
2 beaten eggs
1 c. dry bread crumbs, divided
1 T. Worcestershire sauce
½ c. chili sauce
½ c. boiling water

Directions:

Thoroughly mix meats; add onion, celery, and seasonings. Soak bread in milk; add eggs and Worcestershire sauce; beat with rotary beater. Combine meat, egg mixture, and ½ c. bread crumbs. Form into 2 loaves. Roll in ½ c. bread crumbs and place in a greased shallow pan. Spread chili sauce over each loaf. Pour water around loaves and bake uncovered at 350º for 1 hour. Baste with liquid in pan at 15-minute intervals.
