2 lbs chicken breast, skinless and boneless
2 eggs, lightly beaten
¼ cup cornstarch
¼ cup vegetable oil
2½ cups chicken broth
⅛ tsp turmeric
½ tsp ginger
1 Tbsp sugar
1 Tbsp vinegar or lemon juice
1 can pineapple tidbits
½ cup thinly sliced carrots
1 cup thinly sliced celery
1 green pepper, sliced
2 Tbsp cornstarch
2 Tbsp butter

Directions:

Cut chicken into 1" cubes, dip in egg and then sprinkle lightly with cornstarch. Fry slowly in ½" hot oil until golden, about 5 minutes. Drain off the oil and add the next 5 ingredients along with juice drained off the pineapple. Cover and simmer 5 minutes. Cool and refrigerate until later. Prepare vegetables and refrigerate.

A half hour before guests arrive, reheat the chicken and the sauce, then add the pineapple cubes and 2 Tbsp cornstarch mixed in until sauce is smooth and thickened. Add ¼ cup water and stir. Stir fry the vegetables about 3 minutes, then add to chicken mixture just before serving.
