2 whole pork tenderloins, approx. 2 lbs each
1 Tbsp butter
¾ cup chopped onions
2 tsp salt
¼ tsp pepper
⅔ cup orange juice
½ cup dry white wine
2 Tbsp chopped parsley
1 bay leaf
1 orange
1½ tsp cornstarch
1 Tbsp water
4 cups hot, cooked rice

Directions:

Brown tenderloins in butter until golden brown. Remove from pan and set aside. Saute onions in salt, pepper and butter until onion is tender but not browned. Return meat to pan. Pour juice and wine over meat. add sugar, parsley and bay leaf. Cover and simmer for about 45 minutes or until meat is tender. Meanwhile peel orange and break into sections. Cut the orange peel into thin strips then boil in a small amount of water until tender. Remove orange rind from pan. Blend cornstarch into the water, then add to juices in the roast pan until thickened and smooth. Remove bay leaf. Cut meat into thick slices. Place on platter of rice. Pour sauce over meat garnishing with orange sections and cooked peel strips.
