2 cans ( 1 lb.) apricots
I envelope gelatin
3 T. Water
3 egg whites
1/2 c. Heavy cream, whipped
Toasted almonds, blackberries, raspberries, or loganberries, if sieved, for decoration

Directions:
Directions:
Separate apricots and juice. Purée apricots in blender. Measure purée and make 2 cups by adding some of the juice. Put gelatin in a pan, add 3 T. Water, and let stand for ten minutes. Dissolve over a gentle heat, add to mixture, stirring well. Whip cream until thick and fold into mixture. Pour into a serving dish and set in refrigerator. Decorate with more whipped cream and add garnish of toasted almonds or fruit.

My cousin Madi ( Madeleine ) Grant gave me this recipe a long time ago. You can do it 1 1/2 times and serve 8 with leftovers. Good for company!
