6 small baking potatoes (about 1¾ pounds)
¼ cup butter or margarine, melted
1 tablespoon dried chives
1 teaspoon dried tarragon
1 teaspoon garlic power
¾ teaspoon salt
½ teaspoon black pepper

Directions:
Preheat over to 400º.
Wash potatoes and pat dry. Cut each potato crosswise into ⅛- inch slices, cutting but not through bottom of potato. ( I have found the best way to do this is to place the handle of a wooden spoon on the side of the potato to stop the knife. )

Mix butter and other ingredients and brush over the pleated potatoes. Place on a baking sheet and bake at 400º for about 1 hour or until done.

These accordion sliced potatoes are very pretty to serve. I have been making these for my family and company since I found it in a Southern Living in the early 1990s. Sharon Avinger from Lexington, South Carolina, submitted the recipe to Southern Living.
