1 pound chorizo (Mexican sausage)
1 small onion, chopped
⅔ cup of bottled chunky style taco sauce
¾ cup milk
4 eggs
¼ cup flour
2 cups shredded Monterey or Pepper Jack cheese (or other Jack cheese)
2 7-oz. cans whole green chilies, seeded

Directions:
Directions:
1. Preheat oven to 350º F. Grease an 8-inch by 8-inch baking pan.
2. Brown chorizo until crumbly and well done - about 20 minutes.
3. Add onion and saute until onion is transparent.
4. Drain fat off sausage and onion mixture.
5. Add taco sauce and cook over medium heat until mixture thickens.
6. In a large bowl, beat together milk, eggs and flour; Then add cheese.
7. Layer in prepared baking pan: chilies, pork mixture and cheese mixture. Repeat layers again.
8. Bake at 350º F. for 45 minutes.
9. Let stand 10 minutes before serving.

This is a recipe that I brought home from my first California visit with my roommate, Carole Baskerville. She and her husband Tom live in Malibu. This is one of Tom's recipes. He loves to cook and his food is GOOD !
