2.5 pounds boneless pork loin roast
1 cup maple syrup
4 T. Dijon-style mustard
2.5 T. apple cider vinegar
2.5 T. soy sauce
salt and pepper to taste

Directions:
Preheat oven to 350º
1- Stir together the maple syrup, mustard, vinegar, soy sauce, salt and pepper in a small bowl. Place pork roast in a shallow roasting pan. Spread the glaze over the pork evenly.
2- Roast pork in the preheated oven uncovered until internal temperature reaches 145º. About an hour. Remove dish from oven, and place the pork on a platter. Reserve the marinade.Let the pork rest for about 10 minutes before slicing.
3-After slicing, spoon the reserved glaze over the pork and serve.
