Ingredients: 2 cups Flour 1/4 cup Sugar 2 tsp. Baking powder 1/2 tsp. Kosher salt 1/4 tsp. Ground cinnamon 1/2 cup Unsalted butter cut into cubes 1/4 cup Buttermilk 1 large Egg, beaten 1 Jalapeno chile, diced, seeds and stems removed 1 large Granny Smith apple, peeled, cored, and diced 1 cup Grated cheddar cheese

Directions:Preheat oven to 425º. Grease a baking sheet or cast iron skillet. You can use parchment paper on an untreated cookie sheet.
Mix together the flour, sugar, baking powder, salt, and cinnamon.
Cut the butter into the dry mixture with your hands or pastry cutter until it is crumbles. Stir the buttermilk and egg into the dough. Stir in the jalapeño, apple, and cheddar cheese and mix until combined. You can add more flour if the dough is too sticky. Spoon hand sized balls onto the cookie sheet and bake until lightly browned, about fifteen minutes.

Notes: This recipe was adapted from Lisa Fain's "The Homesick Texan Cookbook" which was given to me, a fellow homesick Texan, as a wedding shower gift by Uncle Mike and Aunt Connie. Mom and I made these when she visited for Carter and Morgan's 2nd birthday and we loved them so much, we made them again in 2017 for their 3rd birthday. Even Carter and Morgan loved them and they definitely aren't too spicy for toddlers!
