3 lbs red potatoes, cut into 1 inch cubes

1/2 cup olive oil

3 Tbsp. Lemon juice

2 Tbsp. Minced Fresh basil

2 Tbsp. Minced Fresh parsley

1 Tbsp red wine vinegar

1 tsp grated lemon peel

3/4 tsp salt

1/2 tsp pepper

Directions:
Directions:
Place potatoes in a large sauce pan and cover with water. Bring to boil. Reduce heat and simmer for 10 to 15 minutes or until tender. Meanwhile in a small bowl whisk all other ingredients together.

Drain potatos and place in a large bowl. Drizzle with vinaigrette and toss to coat. Serve warm or chill until serving.
