12 med. shrimp
1 cup matchstick cut Granny Smith apple
1 cup matchstick cut jicama
1/2 cup " " carrots
1/2 c virgin oil
3 Tbsp. white sugar
2 Tbsp. white vinegar
1 Tbsp. Dijon mustard
1 tsp. chopped garlic
2 sprigs cilantro

Directions:
Directions:
Bring a small pot of water to boil. Cook shrimp in boiling water until turns pink- 3-5 min.
Drain and rinse with cold water. When cool, peel, devein and slice in half lengthwise. Set aside.
Toss apple, jicama, carrots together in a large bowl. Put olive oil, sugar and vinegar, mustard, garlic in food processor. Pulse until blended but slightly chunky. Pour dressing over apple mix, toss,.
Cover salad and shrimp separately with plastic wrap. refrig until ready to serve. Mix shrimp into apple salad, garnish with cilantro.
