1 large head or 2 small artesian heads of romaine lettuce
4 c. small Italian bread chunks for croutons
3 minced garlic cloves
1 c. mayo
1 can flat anchovies- minced
2 T. grated parmesan cheese
1 T. Worchester sauce
1 t. Dijon mustard
1/2 t. dry mustard
2 T. fresh lemon juice
1 T red wine or white wine vinegar
1/4 c. olive oil
Salt and pepper to taste
Oil to sauté for croutons.
Extra garlic for the oil to sauté
3 T. shredded parmesan cheese

Rub a wooden bowl with cut garlic bud. Tear lettuce with hands into bite size pieces and put in bowl. Set aside. Add oil to saucepan and add garlic sliced to oil. Cook until light brown, than remove garlic. Add cubes of bread that you have toasted lightly and mix constantly until lightly browned. Remove from oil and cool.
Dressing: Add to a bowl in the following order. Minced garlic, mayo,minced anchovies and oil from the can, grated parmasean cheese, whorchester sauce,dijon mustard, dry mustard, vinegar and fresh lemon juice. Whip to combine. Slowly while whipping add the 1/4 c. olive oil. Add salt and pepper to taste. Can also be made is Cuisinart or blender adding oil slowly to the blended ingredients. Best , made ahead and refrigerated. When time for service, place the lettuce, croutons and shaved cheese in the bowl. Add dressing in small amounts until all is just covered. Mix in additional Parmasean cheese and last the croutons. Mix and serve immediately
