Turkey or Chicken giblets
Salt pork- 1/2 pound for Chicken, 1# for turkey)
one medium onion
full loaf of stale bread
salt, pepper, seasonings to taste

Directions:
Directions:
Boil turkey giblets with a piece of salt pork. ( for chicken, 1/2 pound and turkey, 1 pound.) Boil until tender at least 1 hour. Chop the giblets with one onion. Use a full loaf of stale bread. Break up in pieces and when juice cools, put bread into it and squeeze out all excess juice. Mix with giblets, add salt, pepper and seasonings, to taste. Mix well and stuff the bird. A larg turkey may take a loaf of bread or more.
