2 large eggplants
1 small onion, chopped in small pieces
2 T white vinegar (or more to taste)
1 T olive oil
Salt to taste

Directions:
Directions:
Bake the eggplants until they’re black and very soft inside. Can also cook on a BBQ or over a burner to get the smoky flavour. Drain the liquid, scoop out the flesh, chop/mash/blend it a bit, and add the rest of the ingredients.
