As many peeled, whole carrots as you'd like
Orange juice
Freshly squeezed lemon juice
Fresh mint
Salt and pepper to taste

Grate the carrots in a food processor or by hand. Depending how many carrots you are using, add some orange juice and lemon: about three parts orange juice to 1/2 part lemon juice. Start with 3 T orange juice and about 1 tsp lemon juice. If it's not enough liquid, double the orange juice and lemon. Now chop up lots of fresh mint, doesn't have to be too fine, and mix thoroughly. Make sure there's enough mint, it's not just there for the colour.
