2-3 cans beans: combination of any of navy, kidney, black beans. If you want to make this suitable for SCD, need to either use dried beans and prepare them as indicated below, or take the canned beans and boil them for 20-30 minutes and rinse well. The canned beans boiled is my own idea and works for me, but is not officially SCD
Black or green olives, sliced
Dill pickle, chopped in small pieces
About 1/4 red onion, thinly sliced and chopped - more or less depending on your taste
About 1/2 red pepper, cut into small cubes or slivers - more or less depending on your taste
Some chopped parsley
Optional: chopped cilantro
Salt and paper to taste
Olive oil, freshly squeezed lemon juice, apple cider vinegar

Mix everything together. Salt and pepper are personal tastes. I dress as follows: I pour over some olive oil. How much depends on how much ingredients you've used. Just start with a few T and add more if it seems too dry. Now pour over about a half to a whole squeezed lemon. Again, depends on your personal taste and size of lemon. Then add a couple T of apple cider vinegar. I know this sounds very loosy goosy but the exact proportions don't matter. You'll see.

SCD refers us to the The Mayo Clinic's website re instructions for a "gas-free soak": In a stockpot, place 1 pound of dried beans in 10 or more cups of boiling water. Boil for 2-3 minutes. Then cover and set aside overnight. The next day 75 to 90 percent of the indigestible sugars that cause gas will have dissolved into the soaking water. Rinse the beans well after soaking. Then cook the beans as you would for your recipe.
