6 eggs, separated
4 1/2 cups almond flour
1 1/2 cups honey
1/2 cup safflower oil
1/3 cup freshly squeezed orange juice
2 tsp vanilla
2 tsp cinnamon
1 tsp baking soda





Directions:
Directions:
Preheat oven to 325°F.
Separate egg whites and yolks into two bowls.
Beat the egg whites until stiff and set aside.
Beat egg yolks in a separate bowl and add all other ingredients.
Mix until smooth and then gently fold the yolk mixture into the egg whites.
Grease a 9” by 13” cake pan and pour the batter into pan.
Bake one hour or until a toothpick comes out clean.

This is the best SCD honey cake recipe I’ve found; however, it tends to burn on the bottom. Try using a heavy cake pan and just know that the bottom may be burnt. We take it out and literally slice off the burnt part.
