2 C sifted flour
1/2 tsp salt
2/3 C vegetable shortening
1 tsp lemon juice
2 egg yolks

3 C finely chopped tart apples
1/2 C sugar
1/2 tsp cinnamon

1 C sifted powdered sugar

Directions:
Directions:
Combine flour and salt. Cut in shortening to coarse but even crumbs.

Blend together the lemon juice, water and egg yolks. Stir into the flour-salt mixture; let stand one minute to thicken. Stir together until particles form a ball. Divide into two portions. Roll each half on a floured surface until about 10 x 14 inches. Fold into quarters, lift gently and unroll on an ungreased 10 x 15 inch jelly roll pan. Fill with the apples, sugar and cinnamon. Top with the remaining crust. Seal edges firmly together. Score with a fork, if desired. Bake at 350º about 40 minutes or until slightly browned at edges. When cooled, drizzle with a thin powdered sugar icing.
