2 Tbsp olive oil
2 Clove garlic
1 Tbsp fresh grated ginger
4 Cups chicken broth
1/2 Tbsp Fish sauce
2 Tbsp Red curry paste
1 Small diced sweet potato
1 Bunch baby bok choy
1 Diced carrot
2 handfuls fresh bean sprouts
1 can coconut milk
1/2 Tbsp Brown sugar
Vermicelli rice noodles

Directions:
Directions:
Add oil, garlic, ginger and red curry paste to a pot and saute on medium heat for 1-2 minutes until fragrant.

Add diced sweet potato, carrot and bok choy stalks along with the broth.

Bring the pot to a boil then reduce to a simmer for 5-7min or until the sweet potato is tender.

Add bok choy greens. Once wilted add in the coconut milk, fish sauce, brown sugar and bean sprouts.

Serve over rice noodles..
