2 packs of fresh brussel sprouts
1/2 lb of pancetta
Olive Oil
Fig balsamic
Salt and pepper

Directions:
Directions:
First, slice pancetta into centimeter cubes and toss into the pan along with olive oil, salt and pepper. Once cooked remove from pan. Keep grease in pan and add about an inch of water to cut the grease. Bring the water to simmer and then add the brussel sprouts (cut in halves) along with some salt and pepper. Put the brussel sprouts flat part down for 3-5 min. until lightly browned. Cover the pan with the lid, slightly tilted. Once cooked remove the brussel sprouts and set aside. Empty water before continuing. After, add back the brussel sprouts along with pancetta. Add in fig balsamic and salt & pepper to taste. Then.....ENJOY!!
