1/2 Red Onion
1 stalk rhubarb
Oil
Cider Vinegar
Mayo
Brown Sugar
Water

Directions:
Directions:
Slice Onion and cook in 1 T oil for 3 minutes. Add sliced rhubarb and cook for another 2 minutes. Remove from pot. To same pot add 2-3 T brown sugar, 2-3 T cider vinegar, and 2 T water. Simmer for 2 minutes and stir. Add rhubarb mix, season with salt and pepper to taste.

Serve with pork.
