2 zucchini squash
4 cloves garlic, peeled and chopped
2 eggs
4 dates, seeded and diced
2/3 cups matzo meal
Salt and pepper
Olive oil

Directions:
Grate the zucchini using a medium/coarse grater. Transfer grated squash to a strainer; press down with a spoon to squeeze as much moisture as possible out of the squash. Transfer the grated squash to a large bowl.

To the bowl of squash, add the garlic, dates, eggs, and matzo meal. Season with salt and pepper. Stir to combine. Set aside to rest for 5 minutes.

Using hands, form the mixture into 12, 1/4-inch thick patties.

In a medium nonstick pan, heat 2 tablespoons of olive oil over medium high heat. Add the squash cakes and cook 3-4 minutes per side or until lightly browned and heated through.

Transfer squash patties to paper towel-lined plate. Season with salt and pepper.
