2 ½ cups superfine sugar
juice of ½ lemon
1 tablespoon rosewater
1 tablespoon orange-flower water

Pastry and Filling
1 stick plus one tablespoon unsalted butter, melted
14 oz (2 packages) filo pastry
3 cups blanched almonds
¼ teaspoon cardamom seeds

Syrup: bring the water, sugar and lemon juice to a boil, and keep at boiling point for 5 minutes. Add the rosewater and orange-flower water, then remove from heat. Pour into a pitcher, let cool and chill in the fridge.

Preheat oven to 350 F

Brush a 9x9x1½ inches pan with butter, and then brush each of the filo pastry sheets as you line the pan with them. Use one package for the bottom layer, placing them in the pan evenly so that the pastry goes up the sides with a little overhang. As the pan is square and the pastry sheets are usually rectangle, you should try to arrange the sheets to that each side is covered in turn. When you have used one package, chop the almonds, with the cardamom seeds, in a processor or by hand until medium-fine and spread them evenly over the sheets. Then continue with the rest of the pastry in the same way. The last sheet on top should also be buttered well, and then with a sharp knife trim around the top edge of the pan to give a neat finish.

Now cut across the baklava square diagonally in one direction and then again in the other direction so you have about 24 diamondy shapes. Make sure you cut right to the bottom of the pan.

Put in the oven and cook for 30 minutes, by which time the filo will have puffed up and become golden brown. As soon as it comes out of the oven, pour half of the syrup over the top. Leave it a few minutes to soak in and then pour over the rest.
