2 cups finely diced apples
1 cup sugar (I use less- NB)
1/4 cup Vegetable Oil
1 egg beaten
1 cup unsifted flour (all purpose)
1 tsp. cinnamon
1 tsp, baking soda
1/4 tsp. salt
1 tsp. vanilla
1/2 cup chopped walnuts

Directions:
Directions:
Place apples in mixing bowl,add sugar stir to mix. Let stand 1/2 hour. Add oil and egg. Blend. Mix and sift flour, cinnamon,soda and salt. Stir in. Add vanilla and walnuts. Turn into well greased and floured 8 inch square pan. Bake 350º for 45-50 min. Dust well with XXX sugar. Serve with whipped topping,ice cream or frost.(optional). I Use almost a teaspoon of emon after the apples are set.(NB)

Believe me when I tell you this is absolutely the best apple cake I have ever had in my life. I have been eating it for at least 50 years! Nekkie was a wonderful neighbor of ours when we lived on Poland Ave. We loved her, her son, her dogs and her apple cake. I dont remember ever eating it with a topping..it never lasted that long!
