4 lb. tomatoes, peeled and chopped
1 lb. chopped onion
5 lg. garlic cloves, chopped
2 T. olive oil
Salt
3 T. coarsely chopped fresh basil

Directions:
Directions:
Put ingredients on baking sheet with sides. Roast at 375 degrees for about 2 1/2 hours. Stir every 30 minutes after the first hour. Tomatoes will form into a soft, thick, slightly carmelized marmelade. Use with pasta or in stews.
