Ingredients: Water ¼ tsp salt 1 lb. dried pasta (cellentani-style screw pasta is the recommended) 2 cups grated Monterey Jack cheese 10 tbsp. butter ½ cup flour 3 ½ cups whole milk 2 cups cubed process cheese (Velveeta recommended) 2 cups grated medium cheddar cheese

Directions:Prep oven: Place oven rack to center position. Preheat oven to 350º.
Cook pasta: In a Dutch oven or large saucepan, bring water to a boil over medium heat. Add salt, then pasta. Stir. Cook 5-6 minutes only. Pasta will be hard in the center. Use a strainer to drain the water. Arrange half of the pasta in a flat layer using a 10x15 inch baking pan. Evenly sprinkle half of the Monterey Jack cheese. Use the remaining pasta to add a second layer. Sprinkle the remaining Monterey Jack evenly across the second layer. Set aside.
Make cheese sauce: In a large sauce pan melt butter over medium high heat. Add flour and stir until the two are fully combined into a yellowish paste. Stir in milk. Continue stirring and continue to heat for 5-7 minutes. Once the sauce begins to thicken, add the processed cheese and the cheddar cheese. Stir until the cheese has melted.
Bake: Pour the sauce over the pasta/Monterey Jack layers until all sections are covered. Bake for 15 minutes. Remove from oven and serve hot. |

Notes: I have to add this bittersweet note to Courtney's recipe. It has been an ongoing mission in the King family to seek out and find the "Ultimate Mac N Cheese" recipe. For years I had it. Everyone in the Kingdom loved it. One day, during a visit Courtney's husband Phill told me that he believed I had been dethroned as the Mac N Cheese King. I did not accept this until Courtney proved up. After all, she had started her cooking experience in her college years; I had been doing it for decades. Needless to say, hers was the best. So, I say this is bittersweet because on one hand I am very, very, proud of the woman she is and her more recently acquired skill in cooking, but on the other, just like any King, I hate to lose a battle. Congratulations, Court!!
